famous dijon tarragon chilled shrimp salad

  • 2 ¬† lbs. cooked peeled tail-on shrimp medium sized (defrosted, rinsed, and patted dry)
  • 1 handful of fresh chopped parsley
  • 1 handful of finely chopped shallots or sweet onion¬†tarragon vinegar
  • 3 TBS tarragon vinegar
  • 2 TBS champagne vinegar
  • 1/4 C extra virgin olive oil
  • 1/4 C dijon mustard I like Sir. Kensington's
  • 1/4 tsp. dried red pepper flakes optional
  • 2 tsp. sea salt


  • Place all ingredients except shrimp in a medium sized bowl. Whisk to combine.
  • Add shrimp and mix everything together with a spoon.
  • Cover with plastic wrap and allow shrimp to marinate and chill for at least an hour, mixing a few times before serving.
  • Serve cold.
