lemon chia seed vinaigrette dressing

  • 1 TBS extra virgin olive oil
  • zest and juice of one lemon
  • 1 TBS raw apple cider vinegar
  • 1 TBS Swerve no carb sweetener or honey
  • 1 TBS chia seeds
  • 2 TBS chives - green parts - thinly sliced. I use scissors - so easy
  • sea salt & fresh ground pepper to taste


  • In a small bowl whisk all ingredients together until combined.
  • Allow vinaigrette to thicken, 20 minutes or so, stirring occasionally.
  • Taste for seasonings.
