Famous Broccoli Salad Recipe
large bunches of broccoli
good quality mayonnaise
honey OR 1/3 C
Swerve no carb sugar substitute
red wine vinegar
fresh ground pepper
sweetened dried cranberries
no sugar added
diced (look for no sugar added) )
1 - 8
block extra sharp cheddar cheese or vegan shredded cheese like Daiya
silvered almonds or chopped walnuts
purple onion (diced)
Cut broccoli into small florets.
Peel stalks with a vegetable peeler and chop into 1/2" disks.
Add to a large serving bowl.
In a separate bowl, whisk mayo together with honey, vinegar, salt, and pepper.
Dice apricots and onion and grate the cheese. Add to mayo mixture.
In a small fry pan, toast almonds over medium-heat until just browned.
Add mayo mixture and almonds to broccoli and mix well.
Serve immediately or make ahead and chill one day prior to eating.
Doubles or halves nicely.
