keto beef zoodles
My number one go-to keto meal.
Servings: 2 servings
- 1/2 sweet onion chopped
- 1 tsp. light olive oil
- 1 lb. grass fed ground beef not lean
- 1/4 tsp. sea salt
- 1/2 tsp. fresh ground pepper
- 1 tsp. ground turmeric
- Sir Kensington's ketchup or your favorite sugar-free ketchup optional
- grated parmesan cheese to taste
- apple cider vinegar to taste
Add oil to large fry pan and cook for about 1 minute over medium heat. (I always use a cast iron pan)
Add onion, beef, turmeric, salt, pepper and saute, stirring often until beef is no longer pink.
While beef cooks, use a spiralizer to spiralized 2 zucchinis into zoodles using the largest blade. Divide zoodles evenly into two shallow bottom bowls. Squeeze lemon over top & microwave for 1 minute to soften zoodles (optional)
Once the beef is cooked, sprinkle apple cider vinegar over to your taste. This gives the beef mixture the tangy taste of burger with pickles. Stir well, and then remove from heat.
Top zoodles with the beef mixture, add ketchup to taste, and sprinkle with parmesan cheese over top.
